Hash for Breakfast with left over Pork Tenderloin

ADVERTISEMENTS

Another of my favorite use for left over tenderloin is a quick Hash for breakfast.
It is very tasty, and healthy and a very filling breakfast.

You can add a Tablespoon olive oil to easily fry the potatoes, but the porkloin usually have enough grease in itself to cook the potatoes.

First cut 2 medium size potatoes in cube.
In a frying pan, add the leftover pork and start heating up.
Don’t add oil. Only add if the meat is too dry and lean.
Medium heat will bring out the oil from the white meat without blackening the meat.
Add the potatoes.
Add one large onion finely chopped.
Now if it seems too dry add some olive oil. This is not compulsory.
Add some crushed garlic and some Worchestershire sauce.

Cook till potatoes are cooked.
Add salt and pepper to taste.
Garnish with cilantro.

This is really good!
